greenbottle Brut Reserve NV
a sparkling chardonnay/pinot noir, made using méthode champenoise, it has a fine bead that pairs well with shell fish & duck pâté.
Blends
bluebottle Red
a very distinct bordeaux style blend based on merlot. medium bodied & fiendishly seductive, dubbed the 'shape-shifter' this wine pairs well with dishes from sashimi to steak.
BLOWFLY Chambourcin
an inky coloured 'big softy', bold fruit & soft tannins define this grape. bright acidity & a hint of gaminess make it a great companion to venison & duck.
BLOWFLY Merlot
our basalt clay soils confer an earthiness to the merlots, & the fine tannins provide an anchor to the ripe fuit. these wines are happiest with a fillet of red meat.
Varietals
BLOWFLY Petit Verdot
a minor bordeaux variety but a big flavour component. dark, spicy & with well-integrated tannins our petit verdot pairs well with slow-cooked meats & curries.
BLOWFLY ShirazÂ

the most variable of our varieties according to vintage, shiraz can be soft & smoky or bold & spicy.  in its softer guise our shiraz pairs well with light gamey dishes like rabbit & quail, while its bolder self craves a darker meat.
Passito
MAELSTROM
a voluptuous passito style wine, made by semi-drying grape berries before vinification. this concentrates the fruit & aromatics of the wine without compromising acidity, yielding a dark, rich & very balanced cheese or dark chocolate dessert companion.
Reserve
CEASE & DESIST Dorbeaux
in simple terms, a bordeaux style blend bottled in dubbo, nsw. but the wines themselves are comprised through careful barrel selection of as little as three barrels from any particular vintage, & are anything but simple. balance is the key, with an eye on ageing refinement.
CEASE & DESIST Val Cuna
a rhone style blend from the coonabarabran region. the Val Cuna evolves from selecting the most intriguing barrels of shiraz & shaping them with touches of chambourcin, petit verdot or viognier to produce a dark, refined, full-bodied wine.
